Dear,

Is it possible that we can have an option that breakfast can be added to the amount of days the guest requests?

Now it is set that if we book breakfast, it is booked for the entire stay.

this is already available in Stayntouch for a while, we call it Custom add ons. The setting needs to be enabled for you so please get in touch with your CSM, should be not problem at all.
